My Mum's Orange Cake


My Mum's Orange Cake

Ingredients:
3 eggs
1 cup sugar
vanilla
rind of 1 orange
1/4 cup oil
3 tablespoons sour cream or yogurt
Whisk all the above together
Add to the wet ingredients:

2 cups flour
3 tsp baking powder
juice of one orange
Continue to whisk these last ingredients and then pour into
a greased and floured pan and bake in preheated 350 oven for 25-40 mins
depending on oven.

Use a bundt, nothing fancy with intricate designs or it'll be difficult to unmould it, also check the chart here to find an equivalent to a bundt, I believe this is one of the bigger size bundts that she always ues (the angel food cake style bundt) http://www.joyofbaking.com/PanSizes.html

If you make a syrup with 1/2 cup sugar and 1/2 cup orange juice and pour over the hot cake makes it even more yummy!!!

All purpose flour and craisins would be nice, sure. Juice of one medium sized orange. So you can count on getting 3 to 4 medium sized oranges in 1 pound. On average, one medium orange has 2 ounces (or 4 tablespoons) of orange juice in it and contains 10 fruit sections. One orange also has 2 to 3 tablespoons of orange zest on it.
